This simple crockpot recipe is a game changer ya’ll. Seriously. This chicken is so very easy to make (as the crockpot does all the cooking for you), calls for staple ingredients in your pantry, and is so versatile. I use this chicken on salads, wraps, sandwiches, on pizza, in casseroles, and even plain for a high protein snack. I typically have a batch on hand every week to get me through lunches and last minute dinners. Clean eating has never been so easy!
- 1-1.5 lb chicken breasts
- 1/2tsp. kosher salt
- 1/2tsp. pepper
- 1/2tsp. onion powder
- 1/2tsp. garlic powder
- 1/2tsp. paprika
- Mix all of the spices together. Rub mixture into both sides of chicken breasts.
- Grease crockpot with cooking spray. Place enough water in the bottom of the crockpot to prevent the chicken from drying out.
- Place chicken breasts in crockpot. Cover and cook on high for 3 1/2 hours (my crockpot does cook on the hot side so your cooking time may vary). I am sure you can cook this on a low setting as well for longer, but I have not experimented with that setting yet for this recipe.
- When chicken is no longer pink in the center it is done and ready to shred. Easy peasy :).
